Assuming: (1) you really like mastery and (2) you're using rare gems and (3) your blue choice is stam (DKs get their absorb even on DS misses now right?) the two blue sockets equate to a choice between 10 mastery (more that you'd gain using all mastery gems and ignoring the bonus) or 40 stam (if you split the two blue slots and get the bonus).
Personally, I'll probably get two split gems and go with the stam for my warrior. My reasoning will be that I'm specing into all the health regen talents ([spell=80129], [spell=16492], [spell=29838], [spell=84580]) which base off percentage of total health, so that stam will translate into reduced healing ultimately. For a smaller difference I'd have to think a little more, but for 40 vs. 10 I feel comfortable without doing the math.
