I think this requires a little updating/summarising... :)
With a ZAPTHROTTLE MOTE EXTRACTORE (ZME) you can extract both Motes and Crystallized elements, and THIS is one of the best perks of being an Engineer!
The motes, extracted from various clounds in OUTLAND, will produce primal elements, which are often very costly these days.
- Arcane Vortexes in Netherstorm for Motes of Mana
- Felmist in Shadowmoon Valley for Motes of Shadow (These are a lot rarer now since most Demons no longer drop the motes)
- Swamp Gas in Zangarmarsh & The Steamvault for Motes of Water
- Windy Clouds in Nagrand for Motes of Air
Contrary to popular belief the clouds are not that rare and you can easily go on a farming spree if you want to. I have collected 40 primals in a couple of hours. Primal Mana, Water and Air are components of Primal Might, which can sell for a lot of gold, as they are used for various recipes and for Alchemists to complete their specialisation in Master of Transmutation.
Each time you extract a cloud, you will receive between 3-5 motes, and you can keep track of the locations if you have a gathering addon. (Note: not all gathering addons register cloud locations though, so read up on your addons before you choose one).
Also you can create a macro by using the formula: #show Mote of XXX, to keep track of how many you have gathered so far... as you fly around Outland trying to suck up as much juicy goodness out of thin air as you can find!REMEMBER TO KEEP YOUR ZAPTHROTTLE MOTE EXTRATOR IN YOUR INVENTORY! Otherwise you will not be able to see the clouds on your mini map - and you will not be able to extract them. Also, since patch Patch 3.2.0 you do not need the goggles anymore to view the clouds on the minimap, just the ZME itself.
In NORTHREND you can use your ZME to extract Crystallized elements, which you combine to create Eternal elements.
- Arctic Clouds in Howling Fjord, Dragonblight, Storm Peaks, and Icecrown produce Crystallized Air and Crystallized Water.
- Cinder Clouds in the Savage Thicket in Sholazar Basin, Cauldron of Flames in Wintergrasp, and Obsidian Dragonshrine in Dragonblight produce Crystallized Fire.
- Steam Clouds in Sholazar Basin and around the Geyser Fields and Scalding Pools in Borean Tundra produce Crystallized Fire and Crystallized Water.
Hope this helps all those mote-sucking Engineers out there. :)

FYI - this does work in Northrend...
I've found several clouds now -
Steam clouds around Fizzcrank Airstrip and in Shoalzar Basin yeild crystal fire and air
Arctic clouds in Dragonblight and Storm Peaks yeild crystal air and water
Cinder clouds around the drakes in Shoalzar Basin yeild crystal fireI'm sure there are more types and more locations... I'll keep an eye out
The mote extractor is for extracting motes (hence the name), you use special goggles http://www.wowhead.com/?spell=30318 to see the dust clouds that suck up motes, motes are used for everything in the expansion so it should be a bit of a money maker!
