I've a question: When you don't have the Exalted rep with Stormwind while completing "The Valiant's Challenge" quest, you earn the achievement "Champion of Stormwind". Will this achievement automatically be updated later on to "Exalted Champion of Stormwind", the moment you earn Exalted rep with Stormwind?

yes... if you look at the requirements you'll have one met already and meeting the other one will grant you this achievement.
Can confirm that if you're exalted with Stormwind on another character, but not on the one you achieve Champion status with, you'll still earn the 'Exalted Champion of Stormwind' achievement
