Here's a quick video showing how to get gold on the the Flowing Forest Flight Reverse race.
I created a custom WeakAura (displayed at the top of the video) showing what ability I use and when (Surge Forward / Skyward Ascent) for anyone struggling to get the gold medal.

If you look to your right and up the hillside, there is a single nearby spike, and then slightly further away two spikes.
Land on the lower of the two spikes, and set yourself facing down into the valley.
You can launch and get a speed boost straight off.
There's also a green orb down there that is a slight over shoot, but you can get it and bank back into course.
