Just go to the exact spot with your bloodgazer out and you should see the injured bloodgazer matriach who you bested. Just speak to her and she thanks you in a way i guess a bird can thank you and she sees you as the alpha so she becomes your mount.
This was the first falcosaur mount i have earned and i must say its been a very cool and challenging quest chain with a very good reward. I intend to do the other now.
If you're having trouble with getting the Injured Matriarch to spawn, go just outside of the Delta, where the game pops up a new area name. Make sure you stay on the ground (i.e. land and/or swap to a ground mount to make sure your pet doesn't despawn if you happen to leave the ground), summon your Bloodgazer Hatchling, then run to the quest point. It might take a second, but the Injured Matriarch (NOT the regular matriarch) will spawn.
Oh, and just to quell any fears: the quest text says you need to heal the matriarch, but you don't need to actually cast any healing or bandages on her. When you talk to her, the dialogue says that you can bandage her.
