Despite the level 60 requirement shown for profession quests, my level 58 alt was able to pick up profession "train me" quests.
I learned DF tailoring, herbalism, cooking and fishing at level 58, but regular zone quests were not available until 60.This gives you a chance to start working on your crafting profs early (gathering too I guess, though I was not gaining xp from gathering nodes).
Once I hit 60 the gathering nodes started giving xp as usual.
