Got this in Eversong Woods with Enchanting. There were a couple of professional items that I saw there, JWC and Tailoring are the ones I remember. You need skill 25 in the profession, and the item needs to say Artisan on it when you mouse over.
Took me 2 tries looking for it in a large raid.

Just to add some information, the ZulAman den has Leatherworking / Cooking / Skinning available. I was able to work on Skinning / Cooking for my group and even scored the Abundance: Professional achieve at the same time :) Since this den has cooking may be the easiest profession to do the achieve on! Happy Hunting.
Heads up: Just saw Mining/Engineering and Blacksmithing in the Voidstorm abundance
