I wonder if this achievement ignores grey quests (i.e. low level quests). I have this Death Knight I started playing approximately 20 days ago. I've played every day, and currently the Quests completed count is 1200. However, my Average quests completed per day count is only 0.08 - and it should be around 60. However, most of the quests have been grey, since I simply started doing all quests from level 1 upwards instead of questing "properly" - currently about to finish with Dustwallow Marsh. Only the DK starting area quests have been completed on proper level (plus two Darkmoon quests).
