- Trot - Simply use the Ram Racing Reins after every two steps the ram takes and you will maintain this speed easily.
- Canter - Use the reins once every second.
- Gallop - Spam the button! Do this one last since it will fatigue your ram fast.

I got a chuckle after reading the name of the quest when I grabbed it. It's a reference to Star Wars Episode I: The Phantom Menace, with a rather infamous line by Jake Lloyd (Li'l Anakin) "Now THIS is Pod Racing!" from the Podracing scene.

The Ram Racing Reins is removed from the game since Brewfest 2013 ( 2013-09-20 to 2013-10-06 )
Now the Extra Action Button 1 is used, known from some bossfights (below center of screen).
Tipp: Use mouse to steer, and use a button to control speed.
With Game Menu - Key bindings - Extra Action Button 1 you can bind a button ,
or put a macro in the actionbar of your choice:/click ExtraActionButton1
But remove other keybindings around that button, which can dismount you.
Instant casts will dismount you, as well as item use macros, ...

So you want to check out the racing rams? The dwarves think they have got a handle on it, but let's be honest, they are drunk most of the time, so how hard can it really be? Now before I let you strut your stuff, you'll need to show me that you can handle these fine, legally obtained creatures. So here's the deal: I'll lend you the use of a ram. You need to prove to me that you can handle using these rams. Keep the ram at a trot, canter and gallop for 8 seconds each.
