You do not need to heal the entire dungeon for this achievement, simply be in a healing specialization when you kill the last boss of the dungeon.
That means you can be a DPS right up until then, and then be a really bad dps for the final fight.

Defeat every Dungeon in Khaz Algar on Mythic or Mythic Keystone difficulty as a Healer.

Only Season 1 dungeons will be available to complete on Mythic difficulty during Season 1, unlike previous seasons. You will be able to complete Ara-Kara City of Echoes, City of Threads, The Stonevault, and The Dawnbreaker with Season 1 launch. Most likely, the other four will be available in Season 2.
For Cinderbrew Meadery specifically - You can still swap to the spec you need only at bosstime for the cheevo, but it seems to key off of killing Brew Master Aldryr and Benk Buzzbee in the needed spec (not Goldie Baronbottom). When we killed just Brew Master and Benk Buzzbee in our offspecs, it gave us the credit. I don't know if it needs both of those or just Benk Buzzbee, we did not test that.
