As noted Above, as of Patch 3.1.0, all Cooking Trainers will now teach you Artisan Cooking, which means no more trips to Gadgetzan and cheese gathering.

Actually, Dirge no longer trains you for Artisan cooking.. he only offers the Clamlette Surprise quest and is a food/drink vendor, with one recipe for tender wolf meat. As for the quest, you can gather the mats if you want, but all that'll get you is the recipe for Clamlette Magnifique (http://www.wowhead.com/?item=33004). Note also that you no longer get the stack of Clamlette Surprise as a quest reward.
After new Patch: 3.1.0 --> You don't have to do a quest now to become Artisan Cooker 225 to 300. You only have to talk to Dirge Quickcleave in the inn of Gadgetzan like you do with a normal cooking trainer.
