While player health resets to full when either side wins, the same does not currently apply to vehicle health. I was sniping a glaive thrower and had two dots on it when the game ended, and the vehicle dropped slowly from 5% health to 0%, whereupon I received credit 8 seconds after the game ended for killing it.
You'll also get credit for a kill if you manage to destroy a vehicle with a siege weapon, another vehicle, a cannon etc.
