I'm amazed nobody has commented on just how stunning Northrend actually is.
This has to be one of the largest, most impressively designed and decorated gaming environments I have ever seen in my life. Sure, there are bits of it that aren't so pretty (Borean Tundra, Zul Drak), but mostly, it's quite simply an amazing thing to look at. Especially when you compare it to the rather flat vanilla landscapes.

Most of the zones are designed for land mounts, and are fully explorable for a 70, though feign death may come in handy. The real challenge come with Icecrown and Stormy Peaks. Icecrown consist of a lot of fortress like structures, with interconnecting bridges, with some large open areas beneath. Many of the bridges and citadels are guarded and patroled by huge elites, but it might be possible to explore it all eventually. Stormy Peaks is where I think you'll finally run out of luck if you try. It's specificly designed to be an inaccesible mountain region, with very few roads and steep cliff
