Note that the old Elementium bar seems to have gotten a name change. The orange-quality bars are now Hardened Elementium Bars (with the old, epic-quality version of the ore becoming Elementium Ingots)
This seems like a pretty good indication that Thunderfury will still be obtainable come Cataclysm.
The most likey reason for this change is to reduce auction house deposits, which were getting pretty high in WotLK. If you want to convert ore to cash through vendors, you'd prospect and sell the cut gems anyway.
