If you have the gold and want to do this achievement in one sitting without running into problems I can recommend the following professions

Enchanting
Inscription
Jewelcrafting
Alchemy
Lastly probably any gathering profession OR engineering (Read below before you start engineering)

The ones I listed you can do in one sitting and don't require sparks etc. However with eng you'll have to keep doing a daily craft for the last skillpoints, but if it doesn't bother you that it'll take some extra time before you see this achievement and you're too lazy to go out gathering then engineering is a viable option.

Edit: I just realised after getting this achievement and writing this comment that there is another achievement for getting ALL professions done.
So if you want that done too I guess it's irrelevant which professions you choose to do. Algari Master of All
