This ability appears to operate a lot like the druid flight form. You can still gather herbs/minerals/skins while 'mounted', but it is less restricted than that. Fishing, Crafting, and even prospecting dig sites while hovering a few yards above ground are all possible.

A tip: If you don't enjoy the fairly slow speed that it grants and still want to safely farm, try canceling your flying mount midair above the collection spot, casting zen flight as you fall, floating down to acquire the goods, then cast your flying mount of choice while still on the cloud for an all around easy, safe, and fast farming experience in areas that allow you to fly. Have fun!
