For warriors, don't be in defensive stance for this (or any other jousting). It will reduce your jousting damage by 5% but you dont get the benefit of the 5% less damage (the mount is taking the damage not you).
For this quest in particular, make sure your taking on lieutenants, not commanders like i did. Killed 2 commanders before i noticed the difference (250,000k health vs 75,000k health, and no quest credit).
A good place to fight them is on the stairs leading up to icecrown citadel; there are no annoying gargoyles there. Just trample your way through the footmen, and if you aggro some commanders just ride all the way up to the top to ditch them, then ride back down and pick up the lieuts with shield breaker.

It might be good to know that you have to mount and use the lance on these guys. Yes I did fly my dk tank down and aggro 5 of them. I live to kill one but its a no go and not good to take these guys unmounted. There is a camp with Jousting mounts use them. Some of us just dont read the whole quest text as much as we read the lightheaded comments.

Description
Even as we ready for the tournament, Argent Crusade forces prepare the way for an assault on the enemy's stronghold of Icecrown Citadel. In the Court of Bones in southwestern Icecrown, a few brave crusaders have set up a forward camp on the southern side of Corp'rethar. Equip your lance and mount the stabled campaign charger at the camp, then destroy the Lich King's minions. Do not fear the masses of boneguard footmen, {name}, for they can easily be trampled under your horse's hooves.
