As far as I can tell, the best thing to do is to just save your bones for the pet and mount. All the other stuff just reduces your bone collection without any significant benefit.
This quest is a daily, so don't buy cheap bones on AH looking to make a profit. It will take you a very long time! Also amount he gives is 1g 14s.
As it is a daily, it won't be powerleveling.
