You have to use the enchant scroll the quest giver gives you on any ring. You can use the ring she gives you if you want.

I have the Hollow Ring that I have enchanted Glimmering Critical Strike and Glimmering Haste. I've also enchanted all ring drops and quest reward rings in War Within but the quest will not update. What am missing?
You need to delete the "Hollow Ring" before re-taking the quest if you use/lose/bug out the scroll, like myself.
