If the mob you need to kill doesn't spawn, dismount the hydra and remount him.
Moving immediately upon mounting the hydra caused the boss to phase out in three attempts. Staying still until the boss finished approaching prevented that for me.
The mobs you need to kill for the meat spawns inside the cave.
