TheWoWDBI think which fights you get may be somewhat random. I've been around since just post-launch, and on my current realm since early WotLK. For fights I got:
-"fought in the name of Azeroth itself!" (fought some rock spiders and a slime)
-"lent their aid to the peaceful people of Pandaria in their time of need" (fought some mogu folks)
-"joined the noble alliance in combat against the Horde!" (fought some random horde npcs)

Tip: You have to click the fountain at the base of the Eternal Watcher to get a new wave of mobs.

We are all eager to see what deeds brought you to us. Simply approach the dais before you and gaze into the flame. The Watcher will pull forth your memories of those you served in life, and you will be transported back to those moments to aid them once more.
