I had to disable all addons to get credit, even though it appeared and sounded as though I had "leveled up" (completed the quest) each time I had previously killed [npc=87085] (while on the silverpelt-in-training mount).

I have come here to read how you are supposed to kill some of these enemies. With Rakkiri, he is not hard to kill but is a pain because you have to stand on the one hill and wait for him to come that way as there is no way to pull him down to you. I have had to wait for a half an hour for him to make it to that hill.
However, I am having troubles with the enemy Gezz'ran and Gorian Beast-Lasher. Gezz'ran has somewhere around 250k health and Gorian has over 300k. That would be fine except my animals that I am trying to train only have 110k and these two guys hit really hard while my animal makes practically no dent in their health. I haven't even gotten to some of the others. The only other two that I have fought are Riplash and Great Tusk and both of those are pretty easy to kill.
I have found that there is not enough information on how to kill those higher hp enemies for me to be able to do so. Is there some kind of trick to it? Is it just a matter of luck?
