You get over 100 pieces of meat per pack of elekks. So it doesn't take too long to complete.
If you have leatherworking and/or a Tannery in your garrison, it will behoove you to do this quest. Spend a few extra minutes in the field and get as much leather as you can. Do all the Shadowmoon Valley quests and bonus objectives, even. When you leave Shadowmoon Valley, the leather will be much, much scarcer, and you will need more, especially when you upgrade your Tannery to levels 2 and 3.
