Just completed this in Legion Remix. Apparently it only drops from The Demon Within corps at Mythic, as the other raid versions don't leave a corps to loot.

Out of sheer luck I got all 20 souls for the previous quest, and killed Gul'dan on normal difficulty, and you can't loot the eye on normal in the same week on the second kill.
Most likely I'll be able to get it from Gul'dan on heroic this ID, otherwise I'd have to wait until the next one.
Got my 20 nightshards after killing Guldan on normal. Went back in later in week and killed him for first time on heroic. No eyeball. GM ticket response said that eyeball will only drop from first kill per weekly lockout, regardless of difficulty (working as intended). Pretty crappy :\

Description
Before we perform the ritual there is one last thing I must ask of you, {name}. You must finally bring Gul'dan to justice. No more of his lies, his deceits, or his trickery. None of it can save him now. Take one of his conjured eyes when you're done. Using his power for good will be a fitting end.
