I had a hard time with this as a Hunter. I put my pet on passive and then when the mob was around half health, I would trap it and my pet would desist attacking. Then I could offer the quest item.
I had to kill around 20 of the guards before finally finding one that actually wanted the offer. It's a pain, but I had the most sucsess on the ramp up to the Witherfall Ruin.

Just as I was, some of the Briarbane venthyr you encounter will have been compelled to serve Matyas. They likely will not want to fight you, but will have no choice. Once they are injured, they may be willing to pause to see if one of the sinstones you recovered earlier is theirs. Free those you can. The use of a sinstone to compel others isn't fair.
