It fills and shine in red when you complete a World Quest, Kill Rares or Open Treasures.During the process, the boss will ambush and give you a hint of what you'll face!
After knocking the boss, he/she'll run and leave a [currency=3392] behind.You can also find traps to disarm and increase your prey bar.
As long as you progress, new quests will show up.
Once you're done, a final quest becomes available revealing the boss location.
Kill it and you're done.

I found a fix.
Go to your quest log and click "track" on the completed quest for "Prey".
Under "All Objectives" on the right hand side of your screen (might need to disable add ons if you are using any slimming down mods), it'll now pop up tracked Quests, with the quest completed and you can now click on it and "Complete Quest".
I'm a skinner. Attacking 'high-value beats' also triggers the Errant Knight to appear (but not always).

Description
Death knights are unstable killing machines at the best of times. Knight-Errant Bloodshatter has forsaken any oath or promise that would ostensibly bind one of his kind to the bottom rungs of civilized society, and has gone completely rogue. He is starting to become a liability. Recoup his anguish so that we can make the best of such an unfortunate situation.
