I know other kind folks have entered a strategy for beating the valiants but I will still post mine.
This has proven to be quite consistent for winning.First off, always have 3 stacks of shield up and wait for the cooldown to finish before engaging the valiant, that way you can pop one right away if needed.
When you challenge the valiant he will run away. Hit him with a shield breaker at this point and then catch up to him to close the distance.
At this point keep hitting thrust, it is a toe to toe fight and you will be winning since nearly all the times I have done this he has not refreshed his shield nor taken a stack of yours.
During this make sure your shield is at 3 stacks and if he starts to run, shield break and close the distance again to thrust as long as the valiant will take it.
You can at any point during the toe to toe, break off for a second to shield break and
possibly charge. I found the charge while dealing a nice amount of damage to be somewhat unreliable for me but do try to do it once in a while to speed up the process.Quick recap
1 - Get 3 stacks of shield (let Cool down wear off)
2- Start fight
3- Shield break right away
4- Close gap and thrust at weakened valiant
5- When valiant runs away, shield break and close gap to thrust.
6- break away once in a while, hit him with a shield break, charge if you can if not close the gap and thrust away.Remember to keep 3 stacks of shield up as much as possible.
This works for me and hopefully it helps someone else.

Description
The grand melee is the most important of the tournament's competitions. The people of Stormwind adore their knights and are looking forward to seeing us win the melee. To that end, they've been honing their skills against the other valiants. I suggest you do the same. Go to the stables outside the pavilion, equip your lance, mount the stabled Elwynn steed, and challenge the valiants. They wait in the Alliance Valiants' Ring just outside our tent.
