I did the training up of 2H axes and swords early on in Borean Tundra (having used mainly 2H maces until 70) with the following method. I don't think that you can skill up on target dummies, but please correct me if I'm wrong.
- Buy a high speed white axe - the Dalaran Great Axe is purchasable in Dalaran and has a 1.80 speed, the current fastest 2H axe speed.
- Get some haste food - Baked Manta Ray, for +30 haste for 1 hour, is easily made from the fish caught in Borean Tundra, or purchased off the AH.
- Drink some juice - Elixir of Lightning Speed for +45 haste for 1 hour.
- Haste gear - There is quite a bit of haste gear in Borean Tundra and Howling Fjord. Although this is not totally necessary, it just reduces the time taken to do the skilling up.
- Haste enchants - Enchant Cloak - Speed (+15 haste for 6 Inifinte Dust) and Enchant Gloves - Minor Speed (+10 haste for 2 Large Radiant Shards and 2 Wildvine) come to mind, minor mats involved. You can place these on cheap white or grey items and keep as your skill-up set.
- Intellect - although I'm not crunching numbers here, I think that haste is going to help you more than intellect in skilling up, with the available buffs for each. But if you can get an AI from someone, or use an Intellect scroll, or wear a set of wacky intellect gear then it might squeeze out a couple minutes of the 1-350 grind.
These same strategies could be used for the various max weapon skill achievements (Did Somebody Order a Knuckle Sandwich? for 400 Unarmed, Master of Arms for 4 weapon skills raised to 400) if you ever get around to it.
If anything, paladins have one of the easiest jobs of AFK skilling up weapons. Just turn on Devotion Aura, turn off any damage increasing blessings, and throw an FoL or an HL on yourself every so often. Then go to town on one of the many mobs with only physical damage and no debuffs (I used a Harvest Collector next to Valiance Keep).

In order of the blues here here is who would want what
Icier Barbed Spear- Hunter weapon without a doubt also a good cat feral druid weapon. You will still be using this untill 78 and only if your revered with Kalu'ka will you find anything better. You get Whale-Stick Harpoon
Wodin's Second-Best Shanker Muttilate spec rogues again will be using this till 78 most likely maybe 77 but there are alot of other daggers better.
Screw-Sprung Fixer-Upper what a name anyway wil be used by resto shamans and holy pallies mostly but also good for Ele shamans. Can be used up till 80 as it is really one of the easiest healing weapons to come by out of instances but hey if your a healer your probobly doing alot of those
Chilly Sloberknocker easily one of the best dps caster staffs till 80 for the simple fact of the hit rating. Also come in good for Priest and Druid healers.
De-Raged Waraxe Simply the best Axe untill 80 there is one that is a bit higher in dps but it holds agility. THis axe is definatly the best tanking weapon for a 2 handed dk tank and is amazing dps for any of the other 2 handed classes out there Including being used as a main hand for the Fury Warrior using Titans Grip.
Crimson Cranium Crusher good for fury warriors still interested in 1 handers, Enhance shamans, and Rogues. Slow weapon makes it good for larger strikes and this is keepable untill again around 77.

Edited again to do below comment.ALL in all a bunch of wierd names and some good weapons.
As for the fights they are quite simple the first is really just a spank and tank.
The second is also quite easy he hits a bit harder
The third boss does some elemental damage and has changing elements every time 5 groups killed him I saw a fire 2 earths a wind and a water one.
The forth summons a wolf companion but is not overall hard
The fifth is kinda like a mini grull he has growths
The sixth is the hardest. He rides a mamoth. you have to beat it to a certain percent then he dismounts you have to ride the mamoth and tank him on the mamoth.A group of 5 75s is fine maybe less. I did it with a 80 ret pally and a 80 holy pally on my 75 Dk and all I did was stand there while they killed it. Really all that is needed is a good healer and a good tank.
The xp gained is very nice easily took me 1/4 to 76 and the gold is also very helpfull.Also if your into pvp stand around here you will get alot of it. saw 3 groups of allies that never left even after dieing over and over again to the pally.
