This whole chain is a reference to the classic arcade game Joust, which I think most people remember playing on the Atari 2600 (it was later ported to the NES and other systems of the time). It was a game where you rode around on a bird, carrying a lance, and jousted buzzard riding bad guys out of the sky. It played the same way these quests do (you mash the Jump button for altitude, and let gravity do the rest).
For the people who dislike the control scheme, it becomes very intuitive in time. Simply flapping quickly for speed and falling into the buzzards works fine. Just know that it's very rare that you fly right into enemies, and it's a lot easier to hit them coming in from various angles.

I play with 700 ping so I had to find another way to do this. What I did was go AFK on one of the rocks on a patrol route so they flew right into my lance. Took 10 mins but I got it in the end.
One of the most horrendous set of game mechanics I've encountered yet. Just let me fly normally, god damn.

Description
Here they come, {name}! The Twilight Knight Riders, astride black buzzards birthed in the scorching sulfurous breeding pools of the Firelands. The only way to defeat them is from the sky! Take wing once more, {class}, and slay them. Run into enemy riders with your lance to destroy them. Go forth. Fly, fool. Fly!
