Like many people have been saying, this quest is bugged.
It tends to stop flying in the direction you want it to and just goes in the same direction regardless of where you're facing.
I found one probable cause and a solution.

Cause: For some reason, this only happened to me if I tried steering the hippogryph while pressing flap (i.e. pressing my forward key/holding down both mouse buttons while pressing flap).

Solution: Don't press the forward or any strafing keys, just steer with your right mouse button and press flap.
Also, if you are stuck and can't dismount your bird while you're flying, simply unequip the lance. You MAY end up falling to your death but it's the only way I was able to dismount the hippogryph.

Should you get low on health, simply land on one of the bottom rocks emerging from the lava, and then dismount and heal yourself. Don't worry about your mount having flown off, because towards the northern part of the cavern is another NPC named Numa Skyclaw and she has a couple of mounts next to her. Also, the lava at the bottom doesn't hurt you when swimming through it!
