Can someone please explain to me why the Forsaken would be interested in helping in this effort?
I can understand that they have a shared interest in removing the scourge. However, to help in the removal of undeath in this area seems counter-intruitive to the end goals of Sylvanas - taking over and ruling Lorderon. The latter of which would also infer that undeath must be spread via their newly created plague formulas.

Do this quest with Zen;kiki the Druid (kill 20 creatures with Zen'Kiki)
You can be sure the Forsaken are plotting behind the scenes. But they have to put their best face forward and play along, or they'll get roflstomped by the people they've already deceived. Sometimes it works to say "NO!" and blast your way through the enemy, and sometimes you have to be amicable until you can stab him in the back. You already see evidence of this deception with previous Forsaken quests in the zone, replanting plague barrels and such.

What to do
Description
No longer does the Scourge hold this area. We, the living, are retaking Lordaeron. We have taken great strides already, as you have already seen. The earth flowers, the trees grow tall and green, and the wildlife is beginning to return. Yet a few remnants of undeath remain. While the trees and grass prosper, the animals are struggling. Something is preventing them from healing, and I intend to find out what. Bring me samples from the plagued wildlife so that I may study them more closely.

Pins are the quest’s own POI points from the current retail client, projected onto the in-game zone map. The game marks one blob as the quest’s turn-in; the rest are objective areas. Points that fall outside a map’s window are dropped rather than guessed at.

Where this quest fits
Before this quest
Taken from the storyline's own step order.
- An Audience with the Highlord
Oh, before you go, <name>... I have a message for you. There's someone in Hearthglen who'd like to meet with you. Said he's "heard your name pop up" a few times already. Consider yourself lucky, <name>. Not everybody gets a personal audience with Highlord Tirion Fordring.
After this quest
Taken from the storyline's own step order.
- Gahrron's Withering Cauldron
My analysis is complete! The blight that affects the animals here is no residual disease. No, it is something new... and I think I know what it is. The Cult of the Damned maintains a plague cauldron on a farm called Gahrron's Withering.
