So, I figured "what the Hell" and ran this on my DK in his usual, Unholy spec just to see if it was even possible. Previously, with Blades of Destiny I ran through the Frost spec with Unholy, so this is my Blood spec.
As you prolly guessed, you die. A lot. All the mobs are designed for Blood, so they hit for insane amounts of damage, and most have a ton of health. Prolly didn't help that I ran this art lvl 110, with crap gear either.
Things become a little less death-ridden once you have the NPCs with you, but the drawback is, they're fricking crazy and run ahead like morons, leaving you no time to heal. I'm sure Blood are fine with this, but not fun for off-spec.
However, the bottom line is this: You can obtain all three weapons without switching spec to do so, although if one of you class specs is heal/tank you're gonna find it a lot of trouble.
Finally, simply obtaining the weapons does count towards unlocking the Arsenal of Power achievement, but you must exit the game, and come back for the achievement to update for some reason.

While it's probably just a coincidence, it is worth noting that KLEO from Fallout 4 often uses the phrase "I've got a weapon for every occasion".
