Automatically when taking the quest, you get a follower - this follower will be the character whose spells/attacks you have to use.. Just like a hunter, their spells will be available for you, in the right corner of your screen. (Depending on where you have your pets actionbars.) I was able to do all the three quests, on two mobs..
Take in note that with 'Baelog' - who has ranged attacks - you'll have to use his spells in distance of the mob.
I hope this was helpful!

What to do
Description
You may not have noticed, but I'm pretty big, as far as dwarves go. I make sure that my two brothers here don't get into too much trouble. They're small, and they don't have a big shield like me. I'm big, and I can handle a few monsters hitting me! Plus, if I'm careful, I can usually get them to hit my shield instead! I can protect you, too. Come on, let's go practice for a bit. I'll make sure the enemies attack me, and not you.
Where to go
Pins are the quest’s own POI points from the current retail client, projected onto the in-game zone map. The game marks one blob as the quest’s turn-in; the rest are objective areas. Points that fall outside a map’s window are dropped rather than guessed at.

Where this quest fits
Before this quest
Taken from the storyline's own step order.
- Baelog, the Glass Cannon
Before I start droppin' arrows on those dragons, I'd better introduce myself. I'm Baelog, the muscle of this group. My sword bites like a crocolisk, and my arrows sing like banshees. I tend to wear down quickly, however, and can't take as much punishment as either of my two brothers.
After this quest
Taken from the storyline's own step order.
- The Wrath of a Dragonflight
Hello, <name>. It looks like you four have had time to become well-acquainted. I have my first assignment for you. Kalaran, an ancient black dragon of considerable power, has joined in the hunt for the egg we are protecting. We need to stop him before he gets too close.
