For me this was a pain to solo, but after a number of deaths I finally got a method that works.
I just finished it on my 120 DK, and here's what worked for me:
Up on the hilltop where Grokkfist patrols, there's a little alcove with the ettin's loot strewn around.
I stood in the alcove as far as I could, and pulled him to me. Then I used the rats. He only ran to about the fire, and then came back. This allowed the rats time to deal damage while I followed, and then backed up to where I started. This back and forth worked out for me, so I hope it helps someone else too.

It may not have been hard in beta, but in live content I had to call in a guildie tank (I'm a feral druid, lvl 120, ilvl 284). The rats didn't last long enough to do much other than make him run into other ettins. So very much not my favorite quest and the first one in BfA I couldn't solo. That's including the Wanted quests that recommend 3 players. :(
Exactly! I am seeing all of these comments saying how easy it is just use the rats, but when i use the rats they do hardly any damage and then the guy runs into other ettins and then i have 2-3 ettins attacking me. Definitely not as easy as people make it seem.

What to do
Description
Grandma is always telling me I need to toughen up a little... how easy we've got it these days. I read a story about giants that are terrified of rats, so I thought, "Hey Charles, here's a great idea, let's take all those rats {name} gathered and let 'em loose on the ettins." I tried to be tough for once, but look how it turned out. Now, I'm stuck out here, just hoping I don't get squashed. Their leader is just up the hill there. Here, take the rats with you and let's hope I was right!

- Wheat A Minute
With the storage shed ransacked by rats and the giants pillaging our shipments, we've been running low on food. When I was making my way out here, I saw a bunch of grain sacks littered about, near the wrecked wagons. I'd appreciate it if you could retrieve whatever you find while you're out here.
