There is a bar over his head indicating his mental state. As he is exposed to sun light, his mental health will decrease. When it reaches zero, he will become incoherent and start screaming infrequently.
You can try to keep to the shadows around the edges of the valley to keep the bar from going lower.His mental state does not seem to have any effect on the success of the mission or your ability to turn in quests!
So I wouldn't worry too much if you cannot keep the bar above zero.

I felt super bad for him in this quest but there's just no way I could complete it before his willpower runs out. But as the other commenter said, it seemingly won't affect the success of your quest or handing it in.
Adding: I completed his first three quests with plenty of willpower left, but when I accepted the next in line (Lost in the Desiccation), it immediately dropped his willpower to 0. So definitely don't worry about keeping it up, because apparently it goes to 0 no matter what!

What to do
Description
Have you encountered an ash ghoul yet? Wretches crawling on the ground. Jump on everything. Terrible table manners. That is the unfortunate fate awaiting all venthyr exposed to the Light for too long. The overwhelming pain it causes us breaks our willpower, our mind, and finally our body. With the right skills, it is possible to reverse the Light's desecration if it is treated quickly. But the ash ghouls in this Light-burned crater are beyond redemption. There is only one mercy left.

Oh the Accuser sent you? How keen! I do, in fact, know the fate of Prince Renathal... at least part of it. When our assault on the Master's keep failed, we were both captured. I was banished to the Ember Ward, but the Prince was dragged off to Sinfall.
