Would just like to add a tip here - while you are collecting the giblets, also grab a gorilla fang - you will need one for Heart of Mokk, the follow-on.
Just saves you going back out and having to kill more.
I too couldn't see the gorillas as an 85 priest. I tried the log trick...it worked for only a couple of seconds. I tried the changing continents trick (learned this on another quest I was having trouble with). I didn't work either. I discovered that it was Bwemba's Spirit that was with me was preventing them from showing. When I abandoned that quest, the gorillas appeared again (after logging).

What to do
Description
If there's one thing I can't stand, it's people who don't pay their gambling debts! And there are a lot of people who owe me. Think you can help me collect? First, there's "Shaky" Phillipe down by the docks. He owes me plenty after last week's game and I want my due! But to get it, we'll have to scare him. Go out of town and hunt elder mistvale gorillas. Find a nice selection of giblets, then take them to Shaky. Don't let on that they're from an animal; let him think the worst.
