Here's my 2 cents:
Stalwart Soul: He could be Cairne Bloodhoof or just a random Tauren that died during the fourth war. Although Cairne seems to be a stretch since he died LONG before the events of Shadowlands so technically he can't be in the Maw.
Plagued Soul: Honestly could be any horde member here. If memory serves the souls trapped in the Maw are only the ones that died since the beginning of Shadowlands, when Denathrius bargained with the Jailer, so no Blood elfs souls being betrayed by Sylvannas killing them at Arthas's whim.
Betrayed Soul: He's definitely Thomas Zelling. He was executed by Sylvannas in the "A Display of Power" quest, for aiding Baine returning Derek Proudmoore, her brother, to Jaina.
Smoldering Soul: This could either be Delaryn Summermoon, the Night Elf from the Burning of Teldrassil Warbringers cinematic ( though the voice actors differ), or just a random Teldrassil citizen that died that day.
No idea on the Familiar Soul, Lirath's soul can't be in the Maw and Nathanos is alive hiding behind a rock 10 feet behind Sylvannas.

Has anyone identified who each soul belongs to?
Fairly sure that the 'Betrayed Soul' is meant to be Thomas Zelling from the BFA campaign. He mentions being killed on Sylvanas' orders and her twisting Derek (probably referring to Derek Proudmoore whose corpse you look for, and reanimate, in an attempt to pressure Jaina) which all seem to align with what happens to him during that story. Think the 'Familiar Soul' who shows up at the end might be Nathanos Blightcaller - or what remains of him. Some part of him was probably spent in the soulforges, so it's just a wisp that seems to follow Sylvanas around and fade in and out of existence.

Description
If you and Arator desire something of me, it will have to wait. There are souls here that require my attention, assuming your bumbling hasn't driven them off. I've managed to track four souls that fell into the Maw without proper judgment. Correct your mistakes and help me to retrieve them, and perhaps I will find time for a chat.

Pins are the quest’s own POI points from the current retail client, projected onto the in-game zone map. The game marks one blob as the quest’s turn-in; the rest are objective areas. Points that fall outside a map’s window are dropped rather than guessed at.

Before this quest
Taken from the storyline's own step order.
- Mad Space
It doesn't matter how many of these void monstrosities we kill. We have to deal with the source, or they'll just keep coming. Traveling across the rift is not an easy feat in the best of times.
After this quest
Taken from the storyline's own step order.
- Preludes and Preparations
As you are no doubt aware, ferrying souls beyond the bounds of the Maw is no easy task. This is not a place from whence souls are meant to ascend. Our resources are limited, but I have devised a way to ensure the relative safety of the souls I retrieve--though I will require materials.
