As of 9.1.5, there is a bug during stage 2 where every shot fired from the catapult will hit an invisible wall and prevent you from killing any gryphons.
The only way I was able to get around this was by aiming the catapult to the right (where there is no invisible wall) and killing the 3 gryphons that spawn periodically at that side, as well as attempting to kill the ones that occasionally flied by.
This bug makes this already horrendously tedious quest take even longer to complete.

What to do
Description
Preparations have been made, and we are ready to set sail. We must strike out at once. Do not dally, or you will be left behind.
Where to go
Pins are the quest’s own POI points from the current retail client, projected onto the in-game zone map. The game marks one blob as the quest’s turn-in; the rest are objective areas. Points that fall outside a map’s window are dropped rather than guessed at.
