The clickable Opals only appear to be inside the Opalcreg cave. I tried going outside to find more but I didn't see any on the ground to click on. I got stuck at 4/8. Found one hiding in one of the green grassy areas with a pool of water which brought me up to 5/8.
Edit: I didn't realize you can also kill the Nerubians inside the cave for the remaining Opals - I was able to get the remaining 3 I needed to complete the quest via killing mobs.

Description
I'll be direct with you. We have a goal here and those opals are the center of it. No one will leave until we get the job done, the opals are too important. If you could gather enough ore, we could convince them to leave. But be careful, those nerubians are dangerous.
